Croquettes

Preparation: 20 mins

Cooking: 4 mins

100g Quaker oats (or as much as  you need to coat)

50g strong grated cheese

2 large potatoes mashed

4 spring onions finely chopped

1 beaten egg

Salt & freshly-ground black pepper to taste  

Add to basket

Add the chopped spring onions to the mash and add the grated cheese.

Season to taste and combine well.

Divide into 8 balls or sausage shapes (that’s up to you!)

Coat with the beaten egg

Roll in the Quaker oats so that they have a nice covering

Deep fry in hot oil for a couple of minutes until golden brown all over.

Drain well and serve

 

Cheat’s note:  If you are really short on time and need a meal in minutes then you can use ready prepared mash or even packet mash!
