Oat and Date Squares

Preparation:

Cooking:

250g stoned dates

2 tbsp lemon juice

2 tbsp water

175g margarine

175g demerara sugar

250g oats

Pinch of salt

Add to basket
  1.  Preheat oven to 180 C or gas mark 4
  2. Grease a shallow tin (7” x 7”)
  3. Place dates, lemon juice and water in a saucepan and heat gently until dates have softened
  4. Heat margarine and sugar in another saucepan, until melted. Take of the heat and stir in the oats and salt.
  5. Press half the oat mixture into the greased tin
  6. Spread the date mixture over it then finish with another layer of oats. Press down well.
  7. Bake for 25 to 30 minutes, until firm and golden
  8. Leave to cool, cut into squares and enjoy.
