Super Scrumptious Oat Cookies

Preparation:

100g/4oz Quaker oats

100g/4oz wholemeal flour

1tsp baking powder

Pinch of salt

25g/1oz desiccated coconut

50g/2oz walnuts, chopped

30g/1oz sultanas

30g/1oz dried cranberries

50g/1.5oz dark chocolate, chopped or chips

100g/4oz butter, at room temp

1 egg

50g/2oz mashed ripe banana

100g/4oz soft light brown sugar

1tsp vanilla extract

1 heaped tsp orange zest

Add to basket
  1. Preheat the oven to 180c/160c fan/gas 4.
  2. In a large bowl, mix together the Quaker oats, flour, baking powder, salt, coconut, walnuts, sultanas, cranberries and chocolate, then put to one side.
  3. In a separate bowl, cream the butter and egg together until smooth then gradually beat in the banana, brown sugar and vanilla extract.
  4. Add the zest and mix until well blended.
  5. Add the bowl of dry ingredients to the mixture and stir until thoroughly combined and a thick dough has formed.
  6. Drop heaped tablespoons onto a lined baking sheet and press down lightly, leaving a 1inch gap between each.
  7. Bake for 15-20 minutes until lightly golden brown
