Quaker Thumbprint Cookies

200g Quaker Oats
225g margarine or butter, slightly softened
175g brown sugar
2  egg yolks
2  egg whites
1 teaspoon vanilla
400g ground macadamia nuts or pecans, divided
400g plain flour
48 chocolate buttons

Add to basket
  1. Heat oven to 350° F. Lightly grease cookie sheet.

  2. Beat together margarine and sugar until creamy. Add egg yolks and vanilla; beat well.

  3. Add combined oats, flour and 200g ground nuts; mix well.

  4. In small bowl, beat egg whites with fork until frothy. Shape dough into 1-inch balls. Dip in egg whites; press one side into remaining nuts.

  5. Place ball nut side up 1-inch apart on prepared cookie sheet; press thumb deeply in centre of each.

  6. Bake 8 minutes; remove from oven; Place one chocolate piece in each centre. Return to oven and continue baking 5 to 7 minutes or until cookies are lightly browned. Remove to wire rack; cool completely.

  7. Store in tightly covered container.
