Avocado and Pea Protein Waffles with Seaweed

Ingredients

  • Quaker rolled oats, blitzed into a flour 180g
  • Pea protein powder 1 tbsp
  • baking powder 15g
  • sugar 20g
  • Seaweed powder 12g
  • salt pinch
  • eggs 2
  • low fat natural yogurt 245g
  • vanilla extract 1 tsp
  • Avocado 1/2
  • Grilled Bacon, crisped (optional) 250g
  • Maple Syrup (optional) 50g

Preparation

  • In a bowl, combine oat flour with protein powder, baking powder and sugar
  • In another bowl, mix eggs with yogurt, vanilla extract and 1/2 Avocado.
  • Add wet ingredients to dry ingredients and stir just until incorporated (do not overmix).
  • Cook waffles in a greased waffle maker according to manufacturer's instructions.
  • Serve with optional bacon and maple syrup.


  • Storage instructions
    Store in an airtight container between layers of parchment paper in the fridge. Re-heat in the toaster before serving.

    2 days

    Note: The dried Nori seaweed can be substituted for 1tsp of salt.
