Ingredients

  • Quaker Oats 90g
  • Semi skimmed milk 120g
  • Mashed very ripe bananas (about 3 medium) 300g
  • Egg whites, lightly beaten 4
  • Vegetable oil 110g
  • Wheat flour 240g
  • Sugar 50g
  • Baking powder 2 tsps
  • Ground cinnamon 1 tsp
  • Baking soda ½ tsp
  • Salt (optional) ½ tsp
  • Ground nutmeg ½ tsp

Preparation

  1. Heat oven to 180°C.
  2. Lightly spray bottom only of loaf tin (9 x 5-inch) with cooking spray
  3. In medium bowl, combine oats and milk; mix well. Let stand 10 minutes.
  4. Stir in mashed bananas, egg substitute and oil until blended.
  5. In large separate bowl, combine flour, sweetener or sugar, baking powder, cinnamon, baking soda, salt and nutmeg; mix well.
  6. Add oat and banana mixture to dry ingredients all at once; stir just until dry ingredients are moistened (do not over mix).
  7. Pour batter into loaf pan. Bake 55 to 65 minutes or until wooden pick inserted in centre comes out clean.
  8. Cool in pan on wire rack 10 minutes.
  9. Remove from pan and let cool completely.
  10. Store tightly wrapped.
