Quaker Super Pancakes

Ingredients

    • Quaker Oats 45g
    • Semi skimmed milk 120g
    • Banana 1
    • Butter 1 tsp
    • eggs 2
    • Cooked quinoa 85g
    • Ground cinnamon 1/2 tsp
    • Baking soda 1/2 tsp
    • Baking powder 1/2 tsp
    • Salt (optional) 1/4 tsp
    • Strawberries in halves 45g
    • Walnuts 20g
    • Maple syrup 1 tsp
    • Coconut oil 1 tsp

Preparation

  • Mix the all the ingredients in a blender.
  • In a nonstick pan heat a teaspoon of coconut oil and pour a spoon of the mixture.
  • Cook for 2 minutes, and when bubbles start to appear in the pancake top, turn over and cook until lightly browned.
  • Repeat with the rest of the mixture.
  • Serve with strawberries, walnuts and maple syrup.
